It's so catchy, gotta love that guitar riff...anyway.
I've never really celebrated Valentine's day per say. There are 365 days in a year to show the person you love how much they mean to you, we don't need a socially prescribed holiday.
I love the fact that Kishore will just pick up some flowers for me on a random day because he thought I'd like some sunshine.

In any case, I wanted to make a little sweet something special for my Sweetheart for Valentine's day.
The thing is...Kishore's not crazy for sweet things, so that kind of put me into a predicament. I was looking through my recipes when I remembered Jelly Biscuits! These tasty treats have just the right amount of sweet, and are quick and easy to prepare. The Strawberry and Almond flavors meld to give a fresh, lightly sweet treat.They are great as a breakfast treat or an afternoon tea treat.
Here's my Recipe for these Slightly Sweet Treats:
Strawberry Jelly Biscuits
Makes 35 Treats
2 cups Unbleached Flour
3/4 cup Milk
1/4 cup Vegetable Shortening
1/4 cup Almond Paste
4 tsp Baking Powder
2 Tblsp Sugar
1/2 tsp Salt
About 1/2 cup Strawberry Jam
Preheat the oven to 425 F
1. Mix the flour, salt, sugar, and baking powder together.
2. Add the shortening and almond paste to the flour mixture and blend till the mixture becomes a course meal.
3. Add the milk and blend with coarse meal to make a soft dough.
4. Knead the dough for a few minutes until it's smooth and pliable.
5. Roll out the dough on a floured area with a floured rolling pin; to about an 1/8 th of an inch thick.
6. Use a 2" wide heart shaped biscuit/ cookie cutter to cut out the dough.
7. Place half of the cut-outs on a cookie sheet about an inch apart.
8. On the other half of the cut-outs use the smaller 1" wide cookie cutter to cut a hole in the center. Then transfer them on top of the ones on the cookie sheet.
9. Roll up the remaining dough and repeat steps 5-9 until all dough is used up.
10. Put a tsp of the Strawberry Jam into each center ring.
11. Bake the biscuits for 12-15 minutes, until they are light golden brown. Transfer to a wire rack to cool.

DeleteWe made these cookies and followed all the directions, and we had to leave the cookies in the fridge for a day because they just wouldn't harden. This morning I checked them and they were very soft. I tried rolling them and they just stuck to the counter, even though I put in lots of flour. I had to make them into small balls, but they were very hard to work with because they were so sticky. What did I do wrong?
ReplyDeleteHi BCC, I'm sorry you had a hard time with this recipe. Let's try to help you figure this out, it could be anything, so I'll go through everything I can think of.
Delete1. Make sure you use Almond Paste.
2. This is a biscuit recipe not a cookie recipe so the method is a little different. You want to add your almond paste and shortening at room temperature to the flour mixture, to make a course meal of the flour before adding the milk. This step is essential, if you over knead the heat from your hands will soften/melt the paste and shortening making the flour very tacky and hard to work with.. If you look at the photo in step 6 you'll still see pieces of almond paste.
3. You said you added a little flour, if it was a little tacky that's fine. You really need to throughly flour your rolling surface and pin so nothing sticks. I would also recommend using a baking mat instead of the counter, it makes it a lot easier to remove the biscuits and dough in general.
