Hispanic Heritage Month Recipes

Each year, from September 15 to October 15 Americans celebrate National Hispanic Heritage Month by sharing the histories, cultures and contributions of American citizens whose ancestors came from Spain, Mexico, the Caribbean, Central and South America. Last year - 2021 was especially significant because it was the 200th anniversary of Costa Rican Independence from Spain. Here are a few traditional & unique Latin American recipes you may want to add to your menu:

How to Tuesday: Quick Pickles

We had a wonderful Memorial Day BBQ this year, but right in the middle of the festivities I realized that we had run out of pickles! No time to go to the store, what do we do!? The answer was simple, into the kitchen I went to make some quick pickles out of red onions, cucumbers, and radishes.
The trick to making successful quick pickles is how thinly you cut the veggies. I would strongly suggest a mandoline but please make sure to use the finger guard, nobody wants pieces of finger in their pickles. This recipe is for about 1 cup juicy, sweet and tangy pickles.
