We always have people with a variety of eating preferences & palates attending our BBQ's. In response, I've always had fun experimenting with flavors and making new burgers for our get-togethers. This time I want to share one that was tried and tested with our family recently and is sure to be a hit at your summer BBQ's. This soy-free veggie burger is packed with flavor, that plays off the herby cilantro and spicy BBQ sauce, topped with an avocado slice on a sesame seed bun. How to Tuesday: Quick Pickles



We had a wonderful Memorial Day BBQ this year, but right in the middle of the festivities I realized that we had run out of pickles! No time to go to the store, what do we do!? The answer was simple, into the kitchen I went to make some quick pickles out of red onions, cucumbers, and radishes. 
The trick to making successful quick pickles is how thinly you cut the veggies. I would strongly suggest a mandoline but please make sure to use the finger guard, nobody wants pieces of finger in their pickles. This recipe is for about 1 cup juicy, sweet and tangy pickles.

Perfectly pickled veggies for salads, sandwiches, burgers, and hotdogs. You can use this recipe to pickle cucumbers, onions, radishes, etc.

Ingredients

  • 1 Cup Medium Red Onion, sliced finely
  • 1 Tbsp Apple Cider Vinegar
  • 1/2 tsp Sugar
  • 1/4 tsp Salt
  • 1/4 tsp Ground Black Pepper

Instructions

  1. Mix vinegar, sugar, salt, and pepper in a bowl.
  2. Add vinegar mix to thinly sliced Red Onion, or other Veggie and mix well.
  3. Let sit for 5 minutes, then it's ready to use on your burgers, hotdogs, and sandwiches.
Yield: 1 Cup
Prep Time: 5 mins.
Cook time: 5 mins.
Total time: 10 mins.
