We always have people with a variety of eating preferences & palates attending our BBQ's. In response, I've always had fun experimenting with flavors and making new burgers for our get-togethers. This time I want to share one that was tried and tested with our family recently and is sure to be a hit at your summer BBQ's. This soy-free veggie burger is packed with flavor, that plays off the herby cilantro and spicy BBQ sauce, topped with an avocado slice on a sesame seed bun. Cooking for KishoreThe seasons have changed here; Days have gotten shorter, Nights have gotten colder and longer, and Trees have changed color and lost there leaves. These weather changes mean one thing in our house, it's officially soup and baking season! On the first truly cold weekend it only seemed right to bake a tasty quick bread including the quintessential Fall favorite, Pumpkin Spice. This soft, slightly sweet, nutty spiced pumpkin loaf encompasses favorite Fall tastes and colors; perfect with a hot cup of tea. 

Here's my recipe:

Pumpkin Walnut Bread

Ingredients

Pumpkin Walnut Bread
  • 3.5 cups Unbleached Flour
  • 2 Cups Sugar
  • 1 tsp Cinnamon, ground
  • 1.5 tsp Pumpkin Spice
  • 1 cup Vegetable Oil
  • 2 tsp Baking Soda
  • 4 Eggs
  • 1 Can Pumpkin Puree
  • 1/2 Cup Walnuts, chopped
  • 2/3 Cup Milk

Instructions

  1. Preheat oven to 350 F. Sift and mix all dry ingredients together
  2. Add all remaining ingredients to the dry mix, and mix well.
  3. Pour into 2 greased loaf pans and bake for 80-90 minutes.
  4. Allow time to cool then cut and enjoy!
Yield: 2 Loaves
Prep Time: 5 mins.
Cook time: 1 hrs. 20 mins.
Total time: 1 hrs. 25 mins.
