We always have people with a variety of eating preferences & palates attending our BBQ's. In response, I've always had fun experimenting with flavors and making new burgers for our get-togethers. This time I want to share one that was tried and tested with our family recently and is sure to be a hit at your summer BBQ's. This soy-free veggie burger is packed with flavor, that plays off the herby cilantro and spicy BBQ sauce, topped with an avocado slice on a sesame seed bun. Whole Wheat Buttermilk Pancakes



Today was a perfect Fall pancake day, crisp and beautifully sunny! After coming back from Sita's 8am Obedience training class at the park, we were hungry. Not just any hungry, pancake breakfast hungry! I didn't have bananas or coconut flour so fluffy Coconut pancakes were out, but Whole Wheat Buttermilk Pancakes were in! These soft, fluffy pancakes were perfect to satiate our hunger, served with some orchard apples. Here's my recipe:

Whole Wheat Buttermilk Pancakes

Ingredients

  • 2 cups Whole Wheat Flour
  • 1 Tbsp Sugar
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Vanilla Extract
  • 2 Eggs
  • 2.5 Cups Buttermilk
  • 1/2 tsp Salt
  • Oil

Instructions

  1. Mix the flour, baking powder, baking soda, sugar, and salt in a large bowl.
  2. Add in the buttermilk, eggs, honey, and vanilla to the flour mixture and stir well.
  3. Heat a skillet over medium-high heat. Brush pan with oil and add pancake batter using a ladle.
  4. When the pancakes have begun to brown on the edges and are bubbling, flip them over to cook the other side.
  5. Serve with maple syrup and fresh cut fruit. Enjoy!
Yield: 2-4 Servings
Prep Time: 10 mins.
Cook time: 15 mins.
Total time: 25 mins.
