Hispanic Heritage Month Recipes

Happy Hispanic Heritage Month! Each year, from September 15 to October 15 Americans celebrate National Hispanic Heritage Month by sharing the histories, cultures and contributions of American citizens whose ancestors came from Spain, Mexico, the Caribbean, Central and South America. 2021 was especially significant because it was the 200th anniversary of Costa Rican Independence from Spain. Here are a few traditional & unique Latin American recipes you may want to add to your menu: 

Chorizo & Veggie Burrito Bowls


Over the past couple of weeks we've been trying new recipes and getting creative in the kitchen, but every once in a while you have to go back and make some tried and true comfort food like... a burrito bowl. I think just about everyone likes burritos, when done right they are flavor-packed bundles of yum! Simply put this Chorizo & Veggie burrito bowl is one of my favorite quick weekday dinner recipes, all the flavor without the wrapping. It's fast, flavorful and chock full of veggies. Here's my Recipe:

Chorizo & Veggie Burrito Bowls

Chorizo & Veggie Burrito BowlsIngredients

  • 1 lb Chorizo Picante, skinned
  • 1 Large Tomato, cubed
  • 1 Large Red Onion, chopped
  • 1 small bunch Cilantro, chopped
  • 1 cup Butternut Squash, chopped
  • 1 cup Sweet Potato, chopped
  • 1 Carrot, chopped
  • 1 cup Corn
  • 1 tsp Ground Cumin
  • 1 Tbsp Tomato Paste
  • 1 ripe Avocado, cubed
  • Shredded Lettuce
  • Sour Cream
  • Shredded Cheese
  • 1 Tbsp Garlic, chopped
  • 1 Can Black Beans
  • 3 Cups Cooked Rice
  • Salt & Pepper

Instructions

  1. Heat oil in a pan and add the red onions, cook till translucent. Take Chorizo out of its skin, add to onion and cook crumbles over med heat.
  2. Add sweet potato, squash, carrot, black beans, half the cilantro, cumin, garlic, tomato paste and 1/4 cup of water. Mix and cook covered until carrot and sweet potato are fork tender.
  3. Add the corn, salt & pepper, and the rest of the cilantro. Mix and cook for 1-2 minutes. Turn off heat and adjust salt to taste.
  4. In a bowl add your cooked rice, a scoop of chorizo & veggies, then top with the lettuce, tomato, avocado, sour cream& cheese
Yield: Serves 4-6
Prep Time: 5 mins.
Cook time: 20 mins.
Total time: 25 mins.
