We always have people with a variety of eating preferences & palates attending our BBQ's. In response, I've always had fun experimenting with flavors and making new burgers for our get-togethers. This time I want to share one that was tried and tested with our family recently and is sure to be a hit at your summer BBQ's. This soy-free veggie burger is packed with flavor, that plays off the herby cilantro and spicy BBQ sauce, topped with an avocado slice on a sesame seed bun. Peanut Brittle - Peanut Chikki


Sometimes you just want something sweet & crunchy, and you want it quick! This quick Peanut & Coconut Brittle is the answer to those cravings. It's crisp, and sweet with just the right amount of crunchiness and the addition of coconut gives it a subtle tropical flavor. Here's my recipe for a quick and easy Indian style Peanut Brittle.

Peanut Brittle - Peanut Chikki

This is a great quick sweet to make, it's crisp, and sweet with just the right amount of crunchiness and the addition of coconut gives it a subtle tropical flavor!

Ingredients

  • 3/4 cup Sugar
  • 1 cup Roasted Peanuts
  • 2 Tbsp Dried Sweetened Coconut Flakes
  • Sea Salted Ghee
  • Candy thermometer

Instructions

  1. Grease a flat baking sheet and a rolling pin.
  2. Melt sugar in a saucepan, making sure not to stir. As soon as sugar melts, reaching 234F (one-string or thread consistency), add the peanuts and coconut, stir quickly and pour onto greased prepared sheet.
  3. Roll out flat with rolling pin while mixture is still hot. Allow to cool and break into pieces. Store in clean glass container for up to a week. Enjoy!
Yield: 20 pieces
Prep Time: 5 mins. Cook time: 20 mins. Total time: 25 mins.
