Black Bean & Squash Veggie Burgers

We always have people with a variety of eating preferences & palates attending our BBQ's. In response, I've always had fun experimenting with flavors and making new burgers for our get-togethers. This time I want to share one that was tried and tested with our family recently and is sure to be a hit at your summer BBQ's. This soy-free veggie burger is packed with flavor, that plays off the herby cilantro and spicy BBQ sauce, topped with an avocado slice on a sesame seed bun. South Indian Vegetable Bonda



Vegetable Bondas are deliciously addictive South Indian Snacks. They are similar in preparation to vadas but instead of a veggie doughnuts, they are the equivalent of veggie doughnut holes! These are simple, quick, and can be made with pretty much any mix of vegetables. It's great as a snack or a side dish. These tasty ones have a hint of sweetness from the peas & summer corn which balances the spice from the chilies nicely, while the cauliflower florets gives them some extra crunch!
Here is my recipe:

South Indian Vegetable Bonda

Ingredients

Vegetable Bonda
  • 1/2 cup Chana Dal
  • 1 cup Water
  • 1 Green Chili
  • 1/2 tsp Asafoetida powder
  • 1/2 cup Cauliflower, small florets
  • 1/4 cup Green Peas
  • 1/4 cup Sweet Corn Kernels
  • 1 Shallot, diced
  • 3-4 Curry Leaves
  • 1 tsp Salt
  • 1/8 cup Cilantro, chopped

Instructions

  1. Soak the Chana Dal in 2 cups of warm water for about an hour.
  2. Drain the water from the Dal and place softened beans in a food processor. Grind to a paste, then slowly add water till it gains a thick batter consistency.
  3. To the batter add all the spices and vegetables. Mix throughly.
  4. Pour oil about 1/2" deep into a frying pan, and heat to medium.
  5. While the oil is heating, with slightly damp hands start forming the balls.
  6. Carefully place them in the oil, and cook till golden brown on both sides.
  7. Drain on paper towels. Serve Hot with chutney of your choosing.
Yield: 10-15

Cook time: 20 mins.
Total time: 1 hrs. 50 mins.
