Black Bean & Squash Veggie Burgers

We always have people with a variety of eating preferences & palates attending our BBQ's. In response, I've always had fun experimenting with flavors and making new burgers for our get-togethers. This time I want to share one that was tried and tested with our family recently and is sure to be a hit at your summer BBQ's. This soy-free veggie burger is packed with flavor, that plays off the herby cilantro and spicy BBQ sauce, topped with an avocado slice on a sesame seed bun. Shrimp Beignets



The first time I had these Shrimp Beignets was in a hole in the wall restaurant in New Orleans that sold dishes with every local kind of fish, reptile, amphibian, and crustacean. These flavorful shrimp fritters reminded me of Salt Cod Fritters - Bacalaítos, which is no surprise, owing to the city's rich, culturally diverse culinary traditions. While the Caribbean influence in these savory morsels is evident, they definitely hold their own. Louisiana hot sauce and yellow cornmeal give these fritters a spicy uniquely southern twist. Here is my version of this recipe:

Shrimp Beignets Cooking for Kishore

Ingredients

Shrimp Beignets
  • 1 cup Unbleached All purpose Flour
  • 1/2 cup Yellow Cornmeal
  • 8oz Cooked shrimp, chopped
  • 6.5 oz jar Goya Fancy pimientos, chopped
  • 2 tsp garlic, minced
  • 4 scallions, chopped
  • 1 bunch cilantro, chopped
  • 1 tsp Salt
  • 3/4 cup milk
  • 1 tsp Hot Sauce
  • 1 tsp baking powder
  • 1 tsp Black Pepper, ground
  • 2 tsp Salt
  • Vegetable Oil

Instructions

  1. Heat the Olive Oil in a medium size pan to medium hot.
  2. Mix all the ingredients till well incorporated.
  3. Drop batter by the spoonful into the oil and fry till golden brown on one side then turn. 3-4 minutes
  4. Drain on paper towels and serve hot. Enjoy!
Yield: Serves 4
Prep Time: 10 mins.
Cook time: 20 mins.
Total time: 30 mins.
