We've been working from home almost 3 weeks now due to COVID-19. We are social distancing by minimizing our time outside in public areas and that means scaling our shopping down to as few trips as possible, ie once every 7-10 days. This has worked well for us as we regularly plan what we need in advance of going to the store. Last week on our store trip, I was happy to find some avocados and just my luck one turned out to be ripe this morning with the others a few days away.
I love avocado and this perfectly ripe one meant it's taste should be enjoyed not overloaded with toppings. So I decided to make this Easy, Simple and Tasty Avocado Toast. No fancy-schmancy toppings, mixes or pureeing, just thinly sliced ripe avocado sprinkled with some salt, pepper, and paprika on a hearty slice of bread. Here's my recipe:
Easy Avocado Toast Emily (Cooking for Kishore)
Ingredients
1 Ripe Hass Avocado, halved & thinly sliced
Hot Hungarian Paprika
Extra Virgin Olive Oil
Sea Salt
Freshly ground Black Pepper
2 slices of Whole grain Bread
Instructions
Lightly toast the whole grain bread and drizzle Olive Oil over the top, add 1 half of the avocado to one slice and the rest to the other slice.
Sprinkle with salt, pepper, and the hot hungarian paprika.
