We always have people with a variety of eating preferences & palates attending our BBQ's. In response, I've always had fun experimenting with flavors and making new burgers for our get-togethers. This time I want to share one that was tried and tested with our family recently and is sure to be a hit at your summer BBQ's. This soy-free veggie burger is packed with flavor, that plays off the herby cilantro and spicy BBQ sauce, topped with an avocado slice on a sesame seed bun. I picked up something extra special for my Aunt this past week at the Farm Store, Chicken Feet! Ever since I was a child we had all heard about her love of Chicken Feet in Tomato Sauce, it brought strange images to my mind until I'd actually seen the dish as an adult. Well, she wasn't feeling great so I figured this would be the perfect opportunity to make her some comfort food and try my hand at a new dish. If eating the chicken feet themselves is not for you, remember you can always just have the sauce/stew and it's totally worth it. It's a low and slow cooking recipe that yields a deliciously silky and flavorful sauce, courtesy of the gelatin & collagen found in the chicken feet. Here's my recipe:

Guisado de Patitas de Pollo - Chicken Feet Costa Rican Style

This low and slow cooking recipe that yields a deliciously silky and flavorful sauce, courtesy of the gelatin & collagen found in the chicken feet.

Ingredients

  • 1 lb Chicken Feet, cleaned & trimmed
  • 1/2 cup Sofrito - Cooking Base
  • 1 Red Onion, chopped
  • 1 Bunch Cilantro, chopped
  • 1 tsp Garlic, minced
  • 1 cup Potatoes, peeled & cubed
  • 1 cup Tomato Sauce
  • 1/2 cup Chicken Broth
  • 1 Tbsp Goya Adobo Seasoning
  • 1/2 Tbsp Goya Sazon Seasoning
  • 1 Bay Leaf
  • 1/2 cup Spanish Manzanilla Olives w/ Pimientos
  • 1/4 cup Olive Oil
  • 1/2 cup White Wine Vinegar
  • Salt & Pepper to Taste

Instructions

  1. Wash the chicken feet, and soak for at least 10 minutes in cool water mixed with vinegar & 1 Tbsp Salt. Then rinse throughly with cool water, with a sharp knife and/or scissors remove the tips of the feet with nails and any left over yellow skin or calluses.
  2. Sprinkle the Chicken Feet with the Adobo Seasoning, Salt & Pepper and let marinate for 10-15 minutes.
  3. Heat the oil in a medium sized pot to medium high heat, and lightly brown the chicken feet on both sides, then lower the heat to medium add the sofrito and cook till fragrant. Then add the onions, half the cilantro, garlic, bay leaf, Sazon seasoning, tomato sauce & chicken broth, mix well, lower heat, cover and cook for about 20 minutes.
  4. Stir in the olives & potatoes, cook for another 10-15minutes and stirring occasionally.
  5. Before serving stir in remaining cilantro, serve with rice. Enjoy!
Yield: 3-4 Servings
Prep Time: 20 mins. Cook time: 45 mins. Total time: 65 mins.
