We always have people with a variety of eating preferences & palates attending our BBQ's. In response, I've always had fun experimenting with flavors and making new burgers for our get-togethers. This time I want to share one that was tried and tested with our family recently and is sure to be a hit at your summer BBQ's. This soy-free veggie burger is packed with flavor, that plays off the herby cilantro and spicy BBQ sauce, topped with an avocado slice on a sesame seed bun. Instant Pot Irish Lamb Stew



Irish Lamb Stew, Stobhach, is Ireland's national dish. It is made of lamb or mutton, potatoes, onions and parsley, sometimes adding when available, turnips, parsnips, carrot and barley. When made in the traditional manner this dish is thick and hearty. Traditionally goat/sheep and root veggies were used before the 16th century introduction of potatoes. This recipe is made with tender lamb, leek, red potatoes, and thickened with split peas.

Instant Pot Irish Lamb Stew

Cooking for Kishore

Delicious hearty, tasty Lamb & Veggie stew, that can be made easily in an Instant Pot or any Pressure cooker. 

Ingredients

  • 1.5 lb Lamb, cut into 1" cubes
  • 1 Large Leek, peeled, cleaned & chopped
  • 3 Carrots, chopped
  • 2 stalks Celery, chopped
  • 6 Red Potatoes, cubed
  • 1 Tbsp Butter
  • 1/4 Cup Dried Split Peas
  • 1 Bay Leaf
  • 1 tsp Thyme, Dried, 
  • 1 tsp Savory, Dried
  • 4 Cups Vegetable or Beef Broth
  • 2 Cups Water
  • Fresh Parsley, chopped
  • salt & pepper

Instructions

  1. Set your Instant Pot to the Sauté setting. Add Butter, Leek, Carrots and Celery. Sauté till fragrant.
  2. Add the lamb and brown, then add the bay leaf, thyme, and savory. Stir till throughly mixed. 
  3. Now add the split peas, broth, water, salt, and salt. Put the lid on and change the setting of your Instant Pot to Manual, High Pressure for 45 minutes. Make sure the pressure valve on the lid is set to Sealing.
  4. After pressure cooking is done, allow the pot to vent slowly. Carefully remove lid, add potatoes and change the setting of your Instant Pot to Manual, High Pressure for 5 minutes.
  5. After pressure cooking is done, allow the pot to vent slowly. Carefully remove lid, salt & pepper to taste, and serve. Enjoy!

Yield: Serves 6

Prep Time: 5 mins.

Cook time: 50 mins.

Total time: 55 mins.
