Hispanic Heritage Month Recipes

Happy Hispanic Heritage Month! Each year, from September 15 to October 15 Americans celebrate National Hispanic Heritage Month by sharing the histories, cultures and contributions of American citizens whose ancestors came from Spain, Mexico, the Caribbean, Central and South America. 2021 was especially significant because it was the 200th anniversary of Costa Rican Independence from Spain. Here are a few traditional & unique Latin American recipes you may want to add to your menu: 

Chili Lime Salmon Skewers

Yesterday was incredibly hot! Definitely too hot and humid to cook in the house and risk overheating. With temperatures reaching over 90F/32C and humidity at 77%, it was definitely a fish and salad type of dinner day, preferably cooked on the grill outside. So, I stopped in at HK Supermarket on the way home and asked my favorite fishmonger for the beautiful salmon steaks that were calling my name.

Quick, tasty and easy were the requirements of the day and this recipe proved to be perfect on all three. I had already planned to make it again sometime next week for dinner, when Kishore asked if we could have it again this weekend, so I'm sure it'll be a hit at our next BBQ.

These tasty Salmon Skewers have just the right amount of sweet, spice, and tart to give a well rounded flavor without overpowering this delicious fish. The sharp spring onions, herby cilantro and spicy ginger garlic meld beautiful and are tempered by the addition of honey and flavors balanced by the tart lime juice while preserving the flavor integrity of the salmon. 

Here's my recipe for Spicy Chili Lime Salmon Skewers:
Serves 4 

Ingredients:

1.5 lbs Salmon Steaks cut into 2" cubes
2 Tbsp Liao's Chili Chutney
1 Tbsp Raw Honey
1 Tbsp Olive Oil
2 Tbsp Spring Onion, chopped
2 Tbsp fresh Cilantro, chopped
1/4 tsp Salt
1/4 tsp Ground Black Pepper
1 Lime
Skewers (soaked, if wooden)

Directions:

1. Make the marinade of Chili Chutney*, oil, honey, salt, pepper, onion, cilantro, and lime juice. Add the salmon cubes, and mix in gently. Let sit for 30 minutes in the fridge.*You can also use your favorite spicy BBQ sauce or hot sauce and add 1 tsp ginger garlic paste.*



2. Place the marinaded salmon on the skewers, and let your grill get hot. Make sure to oil it before placing the fish skewers down and cook for 2-3 minutes over medium high heat, then flip and cook for a further 3-5 minutes. *You can also broil the skewers in your oven, on high setting same timings as above.*




3. Remove from heat and serve with lime wedge and a nice summer salad.
