We always have people with a variety of eating preferences & palates attending our BBQ's. In response, I've always had fun experimenting with flavors and making new burgers for our get-togethers. This time I want to share one that was tried and tested with our family recently and is sure to be a hit at your summer BBQ's. This soy-free veggie burger is packed with flavor, that plays off the herby cilantro and spicy BBQ sauce, topped with an avocado slice on a sesame seed bun. Spinach & Onion Pakora

Wednesday (3/25) was Telugu New Year also known as Ugadi. It is usually celebrated with the reading of the New Years' almanac and traditional foods.

This year, we celebrated Ugadi smaller due to Covid-19. We had Tomato Rasam, Spinach Sambar, Lemon Rice, Carrot-Cucumber Curd Salad, Papadums, Tamarind Chutney, Spinach & Onion Pakora, and of course a little Ugadi Pachadi.

Since we couldn't have the family over we opted for more snack foods for this year's meal. We had beautiful spinach from the farmer's market and plenty of onions so I decided to do a riff on a snack favorite, Onion Pakora. These green & gold crunchy savory fritters were the perfect addition to this year's Ugadi dinner!

So here is my recipe for Spinach & Onion Pakora:

These green & gold crunchy savory fritters were the perfect addition to this year's Ugadi dinner!

Ingredients

  • 1 Medium Yellow Onion, thinly sliced
  • 1 cup Fresh Spinach, chopped
  • 1/4 cup Chickpea Flour, Besan
  • 1/4 cup Rice Flour
  • 1 tsp Garlic Ginger Paste
  • 1 tsp Red Chili Powder
  • 1 Green Chili, minced
  • 1/4 tsp Baking Soda
  • Bunch of Cilantro, chopped
  • 1 tsp Salt
  • 1/2 cup Water

Instructions

  1. Mix both flours, chili powder, salt and baking soda in a bowl.
  2. Add the green chili, garlic ginger paste and enough water to make a thick batter. Add the spinach, cilantro and thinly sliced onion and mix well.
  3. Heat the oil in a frying pan to medium. Once oil is hot, add spoonfuls of batter. Fry till golden brown on both sides. Drain on paper towels before serving. Serve hot with chutney. Enjoy!
