Black Bean & Squash Veggie Burgers

We always have people with a variety of eating preferences & palates attending our BBQ's. In response, I've always had fun experimenting with flavors and making new burgers for our get-togethers. This time I want to share one that was tried and tested with our family recently and is sure to be a hit at your summer BBQ's. This soy-free veggie burger is packed with flavor, that plays off the herby cilantro and spicy BBQ sauce, topped with an avocado slice on a sesame seed bun. Sapote Milkshake - Batido de Sapote

This past weekend we went to the Indian Grocery store to pickup some pantry staples like rice, spices, and frozen goods. As we were walking by one frozen case, Kishore stopped and says, "Ah Babe, Chikoo! I ate this as a kid, can you make this milkshake!?" I told him sure but I didn't know what kind of fruit it was and he says in Telugu they call it Sapota...lightbulb moment I know what Sapote is sure I can!

Sapota or 'Zapote' is the Spanish take on the traditional Nahuatl word to describe this soft sweet fruit - 'Tzapotl'. Sapote also called sapodilla, sapota, chikoo or nispero is a fruiting tree native to Central America, that was ultimately introduced to India and South East Asia by the Spanish.
This is one of my Mom's favorite milkshakes (batidos); it has a deliciously rich caramel flavor without being cloyingly sweet.
Here's my recipe:
