We always have people with a variety of eating preferences & palates attending our BBQ's. In response, I've always had fun experimenting with flavors and making new burgers for our get-togethers. This time I want to share one that was tried and tested with our family recently and is sure to be a hit at your summer BBQ's. This soy-free veggie burger is packed with flavor, that plays off the herby cilantro and spicy BBQ sauce, topped with an avocado slice on a sesame seed bun. Day 4 of Tomato Week- We are half way through Tomato Week and the perfect day to do a salad dish. Tomato Salad is a great refreshing side dish on a hot summer day. This tasty tomato salad is a delicious & fast summer side dish that can be served with almost every meal.

This tasty tomato salad is a delicious & fast summer side dish that can be served with almost every meal.

Ingredients

  • 1 lb Mixed Heirloom Tomatoes, cleaned & chopped
  • 1 Cucumber, cubed
  • 1 Spring Onion, sliced
  • A Few leaves, Leaf Lettuce
  • A Few Sprigs or Fresh Basil
  • 1 Tbsp Apple Cider Vinegar
  • 1 Tbsp Table Olive Oil
  • Salt & Pepper

Instructions

  1. Clean and chop the tomatoes, cucumber,  basil and lettuce, then slice the onion.
  2. Mix it all together in a bowl and add the Olive Oil, Salt, Pepper and Apple Cider Vinegar. Serve & Enjoy!

Yield: Serves 6

Prep Time: 5 mins.

Cook time: 5 mins.

Total time: 10 mins.
