Hispanic Heritage Month Recipes

Happy Hispanic Heritage Month! Each year, from September 15 to October 15 Americans celebrate National Hispanic Heritage Month by sharing the histories, cultures and contributions of American citizens whose ancestors came from Spain, Mexico, the Caribbean, Central and South America. 2021 was especially significant because it was the 200th anniversary of Costa Rican Independence from Spain. Here are a few traditional & unique Latin American recipes you may want to add to your menu: 

Tomato Sandwich




Day 6 of Tomato Week- Today we're doing a sandwich, tomato of course! The epitome of summer garden cuisine is the tomato sandwich! Perfectly juicy Sun-ripened Tomatoes sprinkled with Salt & Pepper on a bed of Lettuce & Garlic Aioli Mayo on lightly toasted French Bread.

Tomato Sandwich Cooking for Kishore

Perfectly juicy Sun-ripened Tomatoes sprinkled with Salt & Pepper on a bed of Lettuce & Garlic Aioli Mayo on lightly toasted French Bread.

Ingredients

Coconut Rice
  • 4 Slices of Rustic French Bread
  • 2 Large Tomatoes, thinly sliced
  • Green Leaf Lettuce
  • 2 Tbsp Garlic Aioli Mayo
  • Salt & Pepper to Taste

Instructions

  1. Clean & slice the Tomatoes sprinkle with salt and pepper, and Clean and tear the lettuce.
  2. Lightly toast the bread, and spread the garlic aioli mayo on one side. Layer the lettuce and tomatoes on the other slice and place other slice on top. Enjoy!
Yield: Serves 2
