Black Bean & Squash Veggie Burgers

We always have people with a variety of eating preferences & palates attending our BBQ's. In response, I've always had fun experimenting with flavors and making new burgers for our get-togethers. This time I want to share one that was tried and tested with our family recently and is sure to be a hit at your summer BBQ's. This soy-free veggie burger is packed with flavor, that plays off the herby cilantro and spicy BBQ sauce, topped with an avocado slice on a sesame seed bun. French Radish & Cheese Toast


In mid April we planted a large mix of different types of Radishes in our kitchen garden, and in the last couple of weeks we've been harvesting them almost daily! Some have been quick pickled, some have gone into salads, others to friends & family, these made it to the breakfast table. This is a tasty & quick light meal with plenty of spring garden flavored bite.

French Radish & Cheese Toast

This French Radish Cheese Toast will be a great addition to your next brunch spread along side: Avocado Toast, Beets & Duck Eggs on Toast, Smoked Salmon Salad, & Strawberry & Cheese Pumpernickel Toast!

Ingredients

  • 1 cup Radishes, sliced
  • 1/2 cup Chive & Onion Cream Cheese
  • 1/2 cup Sprouts
  • Extra Virgin Olive Oil
  • 4 Slices of Whole Grain Bread
  • Salt & Pepper to Taste

Instructions

  1. Thinly slice the radishes using a mandoline, mix with a pinch of salt & pepper. Lightly toast the bread and drizzle Olive Oil over the top.
  2. Spread the cream cheese generously on the toast, layer the radishes and top with sprouts. Enjoy!
